I came across this recipe for a 100% natural pancake from the Blogilates website: 100% Natural Pancakes Recipe
I'm not much of a cook but the recipe seemed easy enough and I really wanted to learn how to make real breakfast foods instead of my usual coffee + grab whatever granola bar/bread/snack I have in the kitchen.
It was easy to make and very healthy! I modified the original Blogilates recipe since I was only cooking for myself and didn't want to make too many.
Ingredients: (makes one serving)
1 Egg
1/2 a Banana
1 Cup frozen or fresh fruits you want to add with your pancake.
Any type of cooking or vegetable oil (I used grapeseed oil)
Method:
This breakfast was so easy I made it twice! (the hardest part is washing and cleaning up all the dishes you used). First crack the egg and slice the banana into small pieces into a bowl. Mix the ingredients so that you get a smooth consistency (try to crush the bananas as smooth as they can). You can either put the two ingredients into a blender or mix it by hand. I recommend using a blender (or something simlar) so that you can get a smoother, more even consistency. It's harder to mix it by hand! But if you can't crush the bananas completely, it's OK as long as it's not too chunky.
After you get the "batter", spread the preferred cooking oil on a large pan. Allow oil to heat up a little. Then, place the "batter" on the pan in circular motions (or whatever shape you want the pancake to be in). When bottom side becomes a light brown color, flip the pancake over.
Add fruits, whipped cream or anything for toppings as you please!
