Last week, someone made a sandwich, using hummus, lettuce, and vegetarian meat and let me it try it. Surprisingly, when I sampled the sandwich I thought it tasted pretty good and it takes less than five minutes to make.
So, I was inspired to make my own version. I don't have hummus or vegetarian meat, so I replaced them with almond butter and egg --for protein-- (sorry vegans). Ever since I tried almond butter, I've been kind of addicted to it. I didn't think it would be that good since I used an all natural one, and it sounds kind of weird, but I actually like it! The flavor is not too strong or sweet, but it's still more flavorful than plain bread.
I know it sounds kind of crazy to use almond butter, but this combo works well (at least for me, haha)! The almond butter gives it a sweeter balance to offset the savory kale and egg.
Ingredients (配料):
1 egg (scrambled or poached egg)- Best if cooked as one piece
all natural almond butter
kale (or any other vegetable)
1-2 slice of bread
Preparation (做法):
1. Prepare/cook the egg first.
2. Optional: I like my kale cooked so I cooked the kale/vegetable first, but you can prepare it raw if you'd like.
3. Spread almond butter on the bread.
4. Place kale and egg on top of each other.
5. Fold bread or place another slice of bread and eat.
